Soup is a great choice for lunch on summer days. It is a light and nutritious meal that can be prepared quickly and easily. Traditional soups for Polish cuisine may have been boring for some of us, so it is worthwhile to stimulate taste buds and prepare a unique soup in the climate of the Orient.
Recently conquering the hearts of chickpeas, it will work not only as an addition to salads or in the form of hummus, but also as a base for the preparation of oriental soups.
Soup chickpea cream
Ingredients:
- 1 can of cooked chickpeas
- 2 tablespoons of butter
- 1 tablespoon of oil
- 1 pore
- 1 onion
- 1 potato
- 500 ml of broth from vegetables or broth
- 150 ml of milk
- 50 ml creams 30% cream
- Toasts or sesame
Preparation:
Glaze the diced onion in a pot of butter and olive oil. Add the sliced leek and stir every now and then fry for about 2 minutes. Then throw in the peeled and sliced potato and fry for about a minute more. Pour in the whole can of chickpeas (including brine) and boil. Season as desired, cover and cook for another 15 minutes (until vegetables are soft). Finally, blend everything thoroughly into a smooth cream and gradually add milk and cream while stirring all the time. Before serving sprinkle with sesame or croutons roasted in a pan.
Oriental cauliflower
- 1 glass of dry chickpeas
- 3 tablespoons of oil
- 1 onion
- ½ teaspoon of ginger powder
- ½ teaspoonfuls of curcuma
- 1 teaspoon garam masala
- 2 litres of broth (vegetable or poultry)
- 3 potatoes
- ½ cauliflower
- 2 cans of sliced tomatoes
- juice from the middle of the lime
- salt, pepper
- parsley
- 1 chilli pepper optional
Finely slice the onion and fry it in a pot lightly in olive oil, add spices and mix thoroughly. Then add the chickpeas from the can (without brine) and slowly pour the broth. Boil everything. During this time, peel the potatoes and cut them into cubes, then throw them into the pot. Wash cauliflower and divide it into roses, add to the soup. Cook until the potatoes are soft. Then add the tomatoes and cook another 7-10 minutes. Season with salt, pepper and lime juice. To give it a spicy taste, add the chili peppers. Decorate with parsley before serving.
